Veggie meals please for fussy eaters

My boys have been avoided most meat for a while now so am wanting to try some vegetarian meals for them BUT they hate most veg and don't eat pasta/rice/cous cous/fish or cooked cheese

am i wasting my time even asking?!

Do they like "meat substitutes" e.g. soya sausages, quorn pieces? Mine tend to like those. They are very quick and easy.

Or what about the following:
Eggs
Hummous
Baked beans (mine won't eat home made beans)
Baked potatoes with various fillings.
Chickpeas (fried or straight out of the tin) or felafel (probably if they're fussy they won't like them but you could try, my fussiest won't eat those)
Peanuts. All mine love those as a snack and they are very good for you (if you don't have nut allergy issues)
Peanut butter. ditto.

have failed with getting any of them to eat lentils post-babyhood.

oh eggs thats a nother no no. Altho DS2 will eat savoury eggs. beans they love so will do more of theose. Jacket spuds, not had those for a long time, will try those. peanut butter we are avoiding as i used to be allergic to it (oddly, until i was pg!)

Mash beans and some seperate grated cheese
baked spuds
new potatoes and salad and cheese
french bread and salad
If you fry and egg and give them bread and butter to dip into?
Sneak some scrambled egg into some mash with peas.
