No sugar cake please?

Friends dad can't have sugar but can have artificial sweetener and fruit juice. Does anybody have a recipe for a good Victoria sponge?

You should be able to get any victoria sponge recipe and adapt the sugar part to use artificial sweetener. IME they vary in the conversion rates, but often about 10% weight of sweetener to weight of sugar. Eg if recipe says 50g sugar, about 5g sweetener.

Does this still make it fluffy?

The cake will have a slightly different texture. From memory, still rises the same and is tasty.
