Easy pudding that uses eggs, to take to a BBQ?

I'm going to a BBQ on Sunday and would like to take a pudding that I can make in advance, ideally on Friday but could do Saturday at a push.

I had a load of eggs delivered today, I ordered a dozen medium plus a dozen large by mistake Hmm

I'd rather use up the mediums and am a bit pushed for time so the simpler the better.

Anyone got any perfect puddings that would fit the bill?

Mary Berrys Lemon Meringue pie .Sorry for the Daily Fail link but its a great pudding.Only uses 3 eggs but you could double up.

Nigella's pavlova. I do the one out of the domestic godess cookbook, but this looks the same recipe and you can whack whatever fruit you desire on it.

Second pavlova. Nigellas chocolate Pav with raspberries is sooooo easy and always a crowd pleaser. I would make the meringue base and then just chuck the cream and berries on it before serving - easy peasy!

lemon curd swiss roll...you can fill it with lemon curd and cream or just lemon curd which also uses eggs!

and a pavlova! With lemon curd

or a lemon tart

I love lemony puddings!

Lemon meringue pie is also very lovely...I read back and killmenow 's suggestion caught my eye!

if you make the pastry too you can use an egg instead of water, makes the pastry much nicer, and for a simpler recipe google for South African Lemon Meringue pie....it uses condensed milk, eggs and lemon juice for the filling....so quick to do!

Thank you for all the new ideas, CaTsMaMmA I too am a big fan of lemon puddings so am loving your suggestions. Just about to check the store cupboard and see what I can easily get done. Feeling peckish now!
