A new ingredient or a new technique?

I just made a roast chilli and lentil soup and it was wonderful. I've roasted chillies before so I guess it doesn't count as a new technique but I haven't put them in soup!

Can I have a flatbread recipe and a recipe for some of the dips if anyone has time? They sound right up my street!

Flatbreads

500g bread flour
225g water
150g yoghurt
4g yeast
6g salt

Mix dry unrefined together then add water and yoghurt.

Mixture should be slightly wet.

Cover with tea towel and leave for ten mins.

Knead really well.

Cover and leave for an hour in a warm place until doubled in size.

Cut off little balls and roll out into circles or ovals (using flour on pin and surface)

Cook in a dry frying pan until brown and slightly blistered.

Before cooking I stuff with various things and make little parcels. Sometimes an egg yolk and spinach which is v satisfying and my DC love as the yolk is all oozy and gorgeous.

Also my favourite dip which is nothing like the ones talked about above but is so so delicious.

1 red pepper
Large tomato
Red onion
Head of garlic
While chilli
60g toasted walnuts
Tbsp pomegranate molasses
Half tsp of smoked paprika.

Roast all the veg on 200 until going slightly black at edges. About thirty minutes.

Squeeze garlic out of skins and discard. Remove stem and seeds from chilli.

Add walnuts, the paprika, molasses and seasoning and blend.

Inspired by the hot weekend weather (which has disappeared today) I made black cherry ice cream.

I added a good splash of kirsch and it was yum.

Thanks Ned! The flatbreads are on the weekend list to go with a chickpea, potato and spinach curry. Fingers crossed I do them justice!

Just made lovely feta and spinach stuffed chicken breasts. Lemon, dill, Ras el Hanout in with the spinach and big slices of feta in a butterflied breast which was griddled then in a hot oven for 20 mins. Very tasty!

I roasted chickpeas the other day with salt and paprika.
For snacking. Yummmmnm

And also pesto chicken soup. Yum.

Sorry for the delay...I normally mumsnet from my mobile and don't really like typing out recipes on the device.

Broadbean and bayleaf hummous:

Prepare beans so you have 2 handfuls of shelled beans, pop them into some boiling water that has had several bay leaves simmering in it. Cook until skins burst, remove beans, remove skins from beans then immerse back into the water, simmer until tender, Remove from heat, chop some garlic finely according to taste, fry the garlic until it is soft, add cooled beans, fry gently for a few minutes until the start to fall apart, remove and either mash or blend into a paste, if the beans are too firm add a splash of olive oil. Enjoy with a pinch of salt and paprika.

Baba Ganoush

Desalt the aubergines, when ready grill aubergines, grill one red pepper, remove skins from both, put to the side, mix 2 teaspoons of olive oil and 2 of lemon juice, pour over both vegetables. Leave to rest for a minute or two, mash or blend until preferred texture. Sprinkle with salt and chilli flakes.

Just made the flatbreads with some chargrilled tikka chicken skewers and raita and they were amazing. Thank you so much! I can see a lot of flatbreads in our future!
