I've got loads of potatoes and veg left over from yesterday's roast, I'm thinking bubble and squeak, but how?

Previous attempts at this have seen me mash it all up and chuck it in a frying pan to brown, then everyone turning their nose up and it ends up in the bin. How do you do bubble and squeak?

I put the potatoes and veg in the food processor to slice it up a bit, but dont pulp it, you want chunks of 1cm ish. We never have enough potato so I usually mash up a few fresh. I put it all in a bowl and mix up with some salt and pepper and a little milk to bind it. Then I switch on the oven and rub a bit of butter in a oven dish and the spread the mixture in the oven dish. I melt some oil in a frying pan and add a batch of the mixture (returning the rest of the mixture to the oven) to the frying pan and fry it so that it starts to brown. I then put the browned bit back in to the oven dish and fry another dollup. I keep doing this till I have fried all the mixture and then add a bit of butter to the top and sometimes a bit of grated cheese and return to the oven. Then I put pickles, chutney and picked onions on the table and have cold meat (beef/ham/chicken leftover from the roast) on the table. By now the mixture should be ready.

Another recipe that´s good for roast leftovers is 100 to 1. Chop up the joint into chunks, do the same with potatoes and any veg (bite size pieces), chuck in a roasting tin and pour over the left over gravy (make up more if you need with bisto) then bung it in the oven to heat it all through again. Especially lovely with a bit of cheese on the top at the end.
