Xmas planning!what puddings can i do now that freeze well?

I know a really easy one thet is made from ice cream got humbs up from whole family wheh I made it...

1 small Christmas cake (a cheap one in a bar shape)
Vanila ice cream (soft scoop works best)
1 small (airplane size) bottle rum/brandy.

Crumble up cake and mash it in with ice cream and booze. Put cling film over a pyrex basin basin and push mixture in then freeze.

Take out when 5 minutes before ready to serve, use the cling film to help you get it out and place upside down on a plate so it's pudding shaped, dust with icing sugar and decoration (I use platic holly) and serve.

well you can make xmas pud now and it'll be just about ready in time (without freezing).

alternatively...

fruit pies freeze well uncooked
you can also freeze blind baked pastry cases for tarts etc now. jamie oliver has some fab recipes - mostly easy-ish.

cake also presumably freezes but it's never lasted that long in our house.

cheers chaps - how about cheesecakes, gateuxy type things? brownies? have a "buffet" (yes i have seen the buffet thread!)to do xmas eve as well
