Recipe Wanted for Cookies that spread when cook and are chewey and gorgoeus?

Dh is getting sick of my attempts which are all biscuity rather than cookie like and dont amagamatre on the trya a sort of mmilllie cookie like cookie is what i want to make, anyone have a rdcipe they use thay can share? thansk

Absolutely gorgeous. Have made them so many times and ALWAYS get asked for the recipe. Sometimes substitute choc chips and hazlenuts in place of white choc and cranberries - lovely

I have a great cookie recipe. They spread and become huge!
Might take me a while to search for it on MN from when i last posted it!

6oz(170g) Butter
3oz(85g)light brown sugar
3oz(85g)Caster sugar
1 large egg
Few drops vanilla extract
8oz(225g)self raising flour
4oz(100g) choc chips
100g melted choc for decoration.

Pre-heat oven to gas mark 4/180C
In a bowl cream together the butter and sugars,add the egg and combine well.
Stir in the flour,vanilla extract and choc chips and mix well.
Line two baking trays with baking parchment.
Divide the mixture into 10 using dessert spoons and slightly flatten out leaving space for them to spread.
Bake for 10-12 mins.
Allow to cool before putting on a wire rack to cool completely.
Using a dessert spoon drizzle the melted choc over them.

These are quite large cookies and very yummy!I have used all caster sugar if you have no brown.

but tortoise, isn't it the brown sugar that makes them chewy? Not the same with all white IMO. (your recipe is more or less the same as mine btw and these cookies are yummy!)

Annabel karmel has a good recipe for oatmeal & raisin cookies and I would love to make them again, they were really chewy but I gave the book away so don't have the recipe anymore, if anyone has it............ pleeeeeeez

tortoise - can you roll them out flat and cut out as I'd like to do some xmas shaped ones - althou I suppose they'd loose their shape when cooking?

I made the annabel ones the other day and theu turned out biscuity rather thna chewy. I think what you have to be acreful to do s really cream together a lot the butter and sugar. Neds to be really creammy apparently. Will post the recipe later, ds has just woken up!
