Hi, anyone got a gingerbread men BISCUIT (not cake) recipe please. I'd love to make them with the children.

Also, just a normal chocolate biscuit recipe too.

Iwant to be able to use our shape cutters to make shape biscuits you see. Thank you.

Lemonaid I am so sorry not to have got back earlier but first I couldn't find the thread - still not sure what happened there, and then our computer went out of action so now I would like to say thank you very much.

And to anyone else, any CHOCOLATE BISCUIT RECIPES out there anyone? thanks.

Chocolate refrigerator biscuits:

8 oz flour
1 tsp baking powder
4oz butter
6oz caster sugar
2oz grated plain chocolate
1tsp vanilla essence
1 egg, beaten

Stir ogether flour and baking powder. Rub in butter finely. Add sugar adn chocolate. Mix to a dough with vanilla & beaten egg.

Normally, you would shape into a long sausage. Transfer to a length of aluminium foil. Wrap foil around sausage, twist ends and roll back ad forth until the roll is 2in in diameter. Refrigerate for one hour then slice thin biscuits from the roll and bake at 190/375 for 10-12 mins until pale gold.

But I'm sure you could just refrigerate it, roll it out, and then cut out shapes and bake. Probably....

Chocolate biscuits (Nigella's Granny Boyd's biscuits)

These are really easy but I don't know if you can do them with cutters. I think you could probably roll the dough out and use them but they do spread out a bit when you bake them.

300g SR flour
30g cocoa powder
250g unsalted butter
125g caster sugar

Preheat oven to 170/ Gas 3

*Seive flour & cocoa powder
*Cream butter & sugar, work in flour & cocoa to form a dough
*Roll into walnut-sized balls
*Space apart on greased baking sheet
*Press down with a fork
*Cook for 5 mins then turn oven down to 150/ gas 2 for 12 - 15 mins until firm but not hard

Remove immediately and cool on rack

Delia smith does a good gingerbread man recipe. I've made it lots of time with my children and it's great. Hang on I'll find a link...

Gingerbread man

175 g (6oz) butter
115 g (4 1/2 oz) dark brown sugar, (i have used granulated molasses or raw sugar)
150 g (5 oz) black treacle (have used honey instead)
1 egg
30 g (12oz) flour
1 t bicarb soad
1/4 t salt
1 1/2 t ground ginger (i used raw ginger)
1 t ground cinnamon
1/2 t ground nutmeg
1/4 t cloves

Use and electric mikxer to cream butter and sugar until light and fluffy. Add treacle and egg and beat till blended. If using raw ginger add now.

Sift all dry ingredents. Add to butter and mix into dough.

Divde dough in half and wrap in cling film.. chill at least 1 hour.

Preheat oven 180 C (350 F or gas 4)

Roll our dough about 3 mm /1/8 inch) thck.

Cut out cookies
Bake 8 - 10 minutes - transfer to wire racks to cool.
