I have been given a huge amount of fresh sage, about a carrier bag full Shock.

What shall I do with it all please?

Freeze it. A carrier bag full is far too much to use- sage is quite powerful

Other suggestions-

Gnocchi with fried sage butter

Chicken or pork snitzel( sp) with sage breadcrumb coating

Sage sautéed potatoes topped with a fried egg

Sage and sausage meat lasagne

Pork chops fried with sage leaves on each side is lovely

Stuffing

Split it into much smaller bunches, and give away to as many people as you know.
Freeze a load, some of the recipies above, but give a load of it away. A carrier bag is far too much!

Second the gnocchi with sage butter or indeed anything with sage butter.

Lovely with butternut squash. What about a roast butternut squash and sausage pasta type thing with lovely fried sage leaves crumbled over the top.

Fried and crumbled into a pangrattato (then freeze) and can be used as a lovely garnish on anything, soups, risottos, pasta etc.

Sage tea is good for 'female ' problems like perimenopause, good for the menopause and heavy periods, also to normalise them if they're all over the place.

Oh and as a rinse for your hair if it's dark. Grin
