Does anyone have any veggie, fish or chicken recipes or ideas on how I could use some mint leaves. I have a voucher for a free pot, but not sure what I could use them for.

Tsatiki (sp?). Yes to tabbouleh.

Fry some haloumi, then make a salad with mint, red onion, halved cherry tomatoes, cucumber, maybe some pomegranate seeds, and sit the fried haloumi on top.

Make homemade mushy peas and stir some mint in.

Make mint tea.

Mix chopped mint leaves with thick Greek yoghurt.

Put it over chicken breasts and bake in oven.

Is lovely hot or cold in pitta, wraps or a salad.

Just to say thank you for your replies. I've got my free mint plant now and will use your suggestions - they've given me inspiration with a couple of new ideas! So far I've chopped them up and put over new potatoes and added to a veggie chilli dish I do - DH seems quite impressed!

You could plant it up into a bigger pot, mint grows like wildfire, it would probably last you all summer.

I do quinoa with mint, parsley and paprika quite a lot as I'm trying to increase protein intake. Also lovely in risotto with peas/broad beans. I had a fab smoothie with spinach, mint, strawberries, banana and almond milk this morning! Mint sorts out most juices and smoothies I think!

Spring vegetable risotto is lovely with lemon and mint. Google 'Jamie Oliver asparagus and mint risotto' (sorry can't do links).
I always use this basic recipe but usually substitute the asparagus for courgette and peas, green beans or similar work well too.

Greek(ish) salad- chopped cucumber, olives, cherry tomatoes, feta cheese and chopped mint with a lemon juice and olive oil dressing. Serve with warm pitta bread.
