What to do with left over egg yolks?

DS2, notoriously difficult to feed, has decided he loves coconut macaroons.

Perhaps not exactly health food but a darn sight better than much of what he is prepared to eat, having only 3 real food ingredients and easy and quick too make.

However, if I make a couple of batches a week (for the whole family, not just DS2!) I have 8 egg yolks left.

I've been putting extras into omelettes or scrambled egg but have discovered you can't really add more than one extra without it all becoming powdery. What else can I do with them?

Pasta carbonara! At least one yolk per person, plus Parmesan and fried bacon. Quick easy supper

There are sauces made with egg yolks, like hollandaise. Also mayonnaise.

Tesco sells egg whites in cartons. Contains about 15. They are in the refrigerated section close to the Jusroll pastry.

I second carbonara, I usually end up with the opposite problem and make cheese soufflé the next day :)
