sweet potato, red lentil and cumin soup?

Roasted is very nice - cut chunks/slices and roast with other veg, tomatos and garlic. Really nice served with pesto on or crumbled feta cheese.

Soup otherwise?

mash? add them to casseroles? moroccan tagine? use a few to make interesting chips? i use them as i would carrots or potatoes. so we have them to accompany things and as an ingredient. you don't have to think of special dishes really.

Bake them and then serve with the following lime, dill and chilli butter:
Soften some butter, mix in some grated lime zest and some lime juice. Add in some finely minced red chillie, some fresh dill and some black pepper and mix. Spoon the mixture into a large piece of clingfilm and fold the clingfilm over the top. Shape the butter into a log shape and chill in the fridge.
Bake the sweet potatoes and serve each one with a large cirle of the butter. It is truly delicious
