Cranks and Mary Berry

I hope someone may be able to help me.

I used to have a Cranks recipe book and made a risotto, it was lovely, made with brown rice and I remember cashew nuts and a tomato sauce, with the whole thing topped with cheese. Does anybody recognise this recipe and know which Cranks recipe book it is in?

Also, a friend has reminded me of a bean casserole/bake I made in about 1994 - she's always remembered it! - it was a Mary Berry recipe but again I don't know what's happened to the recipe book.

Do either of these recipes seem familiar to anyone? TIA!

Was the Cranks recipe 'Rice and vegetable bake' from 'Entertaining with Cranks?'? It's slightly different to your description - no nuts involved, with three layers - brown rice base, then a vegetable layer including chopped tomatoes, topped with a white sauce and cheese.

If so, I have the recipe written down (copied from my mum's book).

fascicle yes I think that is the recipe, it was lovely I remember.

I will order Entertaining with Cranks from the library. I found the Mary Berry recipe as well.

I think I have the Cranks one - brown rice risotto, serves 4

1 medium onion
1 medium green pepper
1 oz butter or margarine
3 tbsp oil
2oz broken cashew nuts
4 medium tomatoes
8 oz cooked long grain brown rice
1 crushed garlic clove
Salt & pepper to taste

Chop onion and slice pepper. Heat the butter and oil in a large saucepan. Add pepper, onion and cashews and sauté till veg are just tender, stirring occasionally. Chop the tomatoes and add to the pan with the rice and garlic. Continue stirring over gentle heat until rice is heated through. Adjust seasoning to taste.

I've never made it - I think the only thing I still make regularly from Cranks is the Armenian soup. This doesn't sound much like risotto to me but it does sound tasty!

Not sure if anyone will see this recipe but if any one is able to post the recipe for the Cranks Rice and Vegetable Bake that would be amazing!
