I guess it was my fault for posting the request for a recipe on recipes rather than food.
250g plain flour, 2tsp soda bicarb, 2tsp baking powder, 1 1/2 tsp nutmeg, 2tsp cinnamon, 250g soft brown sugar, 8floz vegetable oil, 3eggs - beaten, 300g grated carrot, 125g sultanas (or raisins or mixed fruit). 9 inch cake tin (greased + floured). Topping 125g Philadelphia, 75g butter, 225g icing sugar (add more if consistency is too runny)
Mix flour, soda, baking powder, nutmeg, cinnamon and sugar in a bowl. Make a well in the cente and add the oil and beaten eggs. Mix well until all the ingredients are combined. Mix in the grated carrots and raisins / sultanas. Put the muxture into the cake tin and bake in the middle of the preheated oven at 180C/350F/gas mk4/5 for approximately 45 minutes (check (clean skewer)and if not done check a further 5 minutes later)
Topping: Cream the butter and soft cheese together and stir in the seived icing sugar until smooth. Spread over the top of the cake and enjoy.
