...can I just ask you about your recipe?

I have 2 8 inch sandwich tins, do you think they would be suitable?

That recipe makes quite a bit of cake - I have two big square cake tins and it works well in those. Sandwich tins are the flattish ones? It might be a bit too much batter for just two of those?

oh bum - I do have a BIG cake tin, but only one and think I'd be going for hours if I had to bake twice! Maybe I could half the mixture and use my sandwich tins...I'm rubbish at guessing things like this!

You can fill your sandwich tins, then put the excess in the bottom of the big tin, possibly making a large flat cake?

Yeah, leave a cm at the top or so, it does rise a bit, but not loads.

all purpose flour = plain flour
baking soda = bicarb of soda

Any other mysteries? The pineapple is the bit you won't have.

You need mascarpone (or cream cheese), a bit of icing sugar, some orange juice and some orange zest.

Cream cheese frosting is something you buy in the US I think.
