General flavouring? You could choose from:

soy suace
tomato puree
tomato ketchup
HP sauce
marmite
erm, sure there are more...

no would never drink vinegar. thought that was what oven cleaner was for?

its for a recipe speciafically calling for red wine. Something like "shallots in red wine". So the red wine is crucial. But I don't have any. And anyway am unconvinced that the alcol all burns off.

Orange juice often does the trick as it (weirdly) has a similar balance of acidity and sweetness once cooked - add a splash of balsamic by all means but don't replace all the wine with it as it's too strong.
