or will it be inedible? (I found a recipe and tweaked it to fit the brief below)

My son's cookery assignment is to make a salad that contains
1 x carb
2 x protein
3 x fruit & veg

Potato, Parma Ham and mozzarella salad
100 g mixed leaf salad
50g Baby New potatoes (cooked)
2 blood oranges - chopped
Seeds from 1 pomegranate
Juice of 1/2 lemon
4 tbsp extra virgin olive oil
Handful fresh mint
4 balls mozzarella
100g Parma ham
25g Pecorino
Pinch salt
Pinch pepper

METHOD
Wash the salad and shake to dry.
Take the lemon juice, a pinch of salt, pinch of pepper and 3 tablespoons of the olive oil and mix into a dressing.
Toss the salad, potatoes, parma ham and mint in the dressing then put them in the bowl
Tear the mozzarella, mix it with the orange chunks and lay them on top.
Sprinkle pomegranate seeds on top
Drizzle remaining tablespoon of olive oil over the salad
Put pecorino shavings on top
Serve.

By my count, that's

1 carb - potato
2 protein – Parma ham, cheese
3 fruit and veg - blood orange, salad, and pomegranate
1 dressing – salt & pepper lemon olive oil
1 spice or herb - mint

Sounds lovely and has all the components asked for.

The only thing that would worry me slightly is adding the dressing. By the time he gets home it might all be a little limp? Wonder if he could take a little pot for the dressing?

Ah yes. Good point. Thanks. I'll check if it has to be tasted by the teacher and if not, I'll change it to putting the dressing into a pot.
