So just follow the same recipe but swap the digestives for the ginger biscuits I have leftover?

Dip in orange juice (or sherry, or mix of OJ and brandy) then sandwich together with small blob of whipped cream and keep going to make a "log". Then coat with whipped cream and put in fridge for 2-6 hours. Really yummy - my mum used to make it for us but as DC and DH don't like cream I never do.

Yes, just use them like digestives. I love this recipe for the key lime filling, though I don't bother with the decoration and found ginger biscuts work far better than pastry! www.bbc.co.uk/food/recipes/key_lime_pie_53484
