What do you cook for just you and the kids?????????

DH been working away more and more lately, used to only be one night or so but now turning into 3-5nights. So just wondered what you made for yourself and children. I have a 3yr old and a 11mth old so need something we can all eat but is fairly easy/quick.

fio I think due to the age of the kids I dont really make mousakka etc just for us but when dh is here its another adult iykwim.

Our favourite "girlie tea" (when daddy is at work one evening a week) is either falafel with pitta bread and salad, or quesadillas with sliced mango and pineapple for the girls and a hot mango salsa for me. They're both nice and easy and feel v virtuous so we have chocolate or something afterwards too!

DH is away a lot, often 1-2 nights in teh week, & I tend to keep it pretty simple when he's away, but sometimes also cook extra & freeze some stuff like shepherds pie with enough just for me & DS, otherwise it barely seems worth making it.

Pizza, scrambled eggs, omelettes, beans on toast, baked potatoes, etc.

Then when DH is home I spend a bit more time & do casseroles, roasts, lasagne, etc etc.
