Is lettuce soup nice?

DS soup desperate to make it. In my head it's like soggy lettuce but braised lettuce is nice so presumably this would be too?

Use onions, lettuce, chicken stock, potato cut into smallish dice and simmer.

Blend and then season.

You could also add some garlic.

As tb said. I used to make it when I had an allotment full of lettuce that I could not possibly eat. The soup was fab. I would often add some frozen peas at the end and a splash of cream.

The recipe I've seen has peas and mint which sounds nice. I'm my much of a recipe follower so I'm apprehensive but shall give it a go. What kind of lettuce is best?

It's fine. Not terribly exciting, but delicate, quite elegant. I tend not to add potato but a dash of sherry and a small amount of nutmeg at the end.

You can also use lettuces that are about to bolt.

Lovely with peas and mint. Lettuce and peas is amazing. Little bit of crispy bacon instead of crotons for texture and depth, mmm.
