butterbeans....

Have decided that we have a disgusting amount of food shoved in cupboards, freezer etc (and could probably feed the nation for a good week in a disaster situation with the amount I appear to have accumulated) so in the spirit of using up not buying more I am writing out a list of everything we have and a meal to include it in.....

Butterbeans - never cooked with them but bought them to make jack and the beanstalk magic beans for my 4 year olds nursery homework....now have nearly a full bag remaining in cupboard but in date.

What can I do with them?!

Ps I realise this makes me sound like a total idiot Blush!

Khalinda, that sounds lovely. Do you just use tinned beans? No liquid?

Remus - yep, tinned beans ( I usually put in 2 or 3 tins) and no other liquid. I stir it occasionally and the bits on top that get a bit crispy are the best :)

I will give it a try!

I like butter beans in a veggie sausage casserole with passata, honey, paprika and lots of grainy mustard, so I'm liking your honey and mustard idea. :)

Mine?

Fry diced onions, garlic, red or green pepper, couple of carrots. Add paprika, honey, grainy mustard, tub of passata. Cook until carrots are soft-ish. Add sliced veggie hotdog sausages and drained butterbeans and warm it all through. Add loads of black pepper.

Remus - made it last night - didn't have sausages so put in tempeh and I didn't have honey. Delicious, thanks, added to my repertoire.

Do try it with vegetarian hot dog sausages, if you get the chance. They and the paprika work together to make a lovely smokey taste. I like it with lots of flat leaf parsley sprinkled over it, and then served with a jacket potato and soured cream, or with hassleback potatoes.

I love butter beans but only ever use them in sausage casserole so this thread is great.
