What to do with a glut of green peppers?

I keep buying those three packs of peppers, but while I use the red and yellow, I tend to waste the green. Any suggestions for what they taste good in please? I have two fussy toddlers too! Thanks

Make a stir fry with some ground coriander & salt thrown in. Tastes great with rice.

I've also used it raw in sandwiches along with hummus....takes some getting used to, but that's nice too.

Oops...forgot to say...cut it in long slim pieces for the stir fry.

Use a little star or flower cutter and cut shapes out and use in salad, or spag Bol etc

If you leave them on a sunny windowsill, sometimes they will ripen and turn red(ish). Sometimes they go shrivelled and manky first though.

I end up roasting them and eating them myself because no-one else here will eat them either.

Chop them up and freeze them, later defrost, liquidise and use as a base for soups and sauces.

Stuff them with rice and chorizo and bake them.

I'd wrap them in newspapers and leave in a suitcase to try to ripen them and hope they become red! Green ones give us tummy ache.
