The MN never-ending Chicken - Risotto help please

I'm using HFW's risotto recipe here

Quick questions...how much rice for 5 people? (2 Adults, 3 Kids) and i've got a pot of porcini mushrooms in the back of the cupboard....um how do I cook them Blush

Also what do you usually serve with risotto? Salad? Fresh bread?

Generally do about 75g of rice per adult, so depending on age and appetite I would say 250g for your family.

Are the mushrooms dried? If so, soak them in boiling water (probably instructions on the packet) then use the water in the risotto -add the mushrooms themselves partway through cooking.

I don't usually serve anything (other than vast quantities of parmesan) with mine, but I always have leek, celery, onion and garlic in mine, so it is a complete meal for us (I finely chop them all and sweat at the start).

Good luck - we love risotto (the only reason my son tolerates eating roast chicken is that he knows it's the only way he can have risotto!) Grin

I would go for salad over bread (maybe both) as a big rice dish with a lot of bread would be a bit too carby even for me. I agree with about 75g of rice per person. The mushrooms should have instructions on them if they are dried, how long to soak for etc. You cook everything together with risotto so 'in the risotto' would be my answer about 'how to cook them'.
