Leftover Thai red curry paste

Made Thai red curry yesterday for the first time. It was alright but not that fussed for it. Unfortunately I was noticing as I put the jar of paste in the fridge that it's meant to be used up within 7 days of opening. I've frozen leftover two portions of the curry already and don't really want to make anymore. Can I use the paste for any other recipes? Preferably not using coconut milk? Can I freeze the paste?

I stir it into my fishcake mix when mixing the mash and fish. Particularly lovely with salmon.
Also nice in sausage rolls.

Oh and yes you can freeze the paste. I usually do it in little ice cubes

I just use it as a paste on lamb chops an hour or so before I grill them, I do that with any leftover curry paste. It doesn't hit them with a massive curry taste but just enough to make it interesting.

I use lamb for this mainly but it should work on pork, chicken or salmon.
