Girls night in on Friday - what shall I cook?

I'm finding it really hard to make a decision Grin

6 or 7 or us, it might be late by the time we eat so nothing heavy.
I want to do all the prep and cooking during the day, so either cold dish, in the slow cooker or something that I can pre prep and just put in the oven.

I'm not out to impress so nothing fancy, just something tasty.

How about fajitas - you can do all the veg chopping and salad prep in the day then it takes about 5 minutes to cook when your guests arrive. Or on a similar note you could do a bowl of chilli and serve with nachos and dips?

Or slow cooked beef in red wine you can chuck it in the slow cooker, I either serve that with mash or homemade wedges and veg - might be a bit of a stodge fest though if you are after something light

Roast a chicken in the day, let it cool and serve cold with potato salad, mixed leaves, tomato salad, brie and crusty bread. Mmmm. You can prepare everything ahead of time and people can eat as much or as little as they fancy.

Thanks guys. I'm going with the roast chicken and salad but thanks for reminding me about fajitas. I'll make those on Saturday with any left over chicken. Smile
