What can I do with 2 jars of cranberry sauce??

Have done a clear out and discovered 3 jars of cranberry sauce - one is Dec 06 use by date and the other 2 are Nov 06.

What can I do with them?????

I often pop a spoonful into my gravy along with a healthy splash of red wine.
if making your own stuffing, mix in a dollop to the mix rather than serving the sauce separate
I think that there is a recipe somewhere for cranberry muffins that uses cranberry sauce.
roasted shallots, port and cranberry sauce is nice with meat as a side dish
not sure about this one - swirled through some creme friache and serve with broken meringue and grated choc (got out of a recipe book...)

Make a pasta sauce with mushrooms. Have a nice recipe somewhere- sounds weird but is really nice. Will look it out.

Button Berry Pasta Sauce

Serves 2

200g button mushrooms, washed and thinly sliced.
1 medium onion
4 tbsp/100ml Greek yoghurt
2 tbsp/50g grated cheddar cheese
2 tbsp chopped parsley
50g butter
1 tsp dried tarragon
6 tsp cranberry sauce

Heat the butter in a medium sized frying pan and add the shallot or onion once sizzling.

After a couple of minutes of gentle sauteeing, throw in the mushrooms and continue to cook until soft.

Stir in the cranberry sauce, cheese, yoghurt and parsley and remove from the heat.

Serve with pasta.

Can be frozen if you make a load.

I think a muffin recipe is what I need!

We are out for lunch today but have a chicken for tomorrow so will use in gravy and on the side.

Will also try the pasta sauce recipe - probably on a evening when DH is out - doesn't sound like his "thing"!

So - that is maybe half a jar?? Any other bright ideas?

Gosh they must be big jars - we clear half a jar with chicken (there are 3 of us)

No Katymac - just Tesco jars! DS doesn't like it and I just have a little bit. DH would have more.

Will def try the pasta sauce recipe - if nice it could be a regular!
