George Foreman grill vegetarian ideas?

bought a George foreman grill today. Was the choice between that and a panini press and I figured I can make panini in it and use it for other things too.
We are vegetarian and plan to use it for cooking veg sausages and burgers but what else?
what do you make in yours?

its the one with the floating lid that can melt toppings if that makes any difference.

I haven't got one but vegetable kebabs? (With tomato, mushrooms, pepper, etc)

Sliced courgettes and aubergines and onion wedges?

Grilling aubergine courgettes etc, peppers are nice and gallium as mentioned! Ours has flat plates for frying eggs, onions etc

Well so far I have had success with toasted cheese rolls, peppers, sausages and quorn nuggets (not all together!) and I'm currently doing sweet potato chips.
beginning to wonder how I lived without it!
