I've tried slicing and freezing together like a regular sliced loaf-it sticks together.

I've tried slicing, laying on a tray and freezing, and bagging up-it crumbles

What am I doing wrong oh wise MNers?

Id just slice and bag it. A knife blade usually persuades it to seperate, or you could always drop the bag on the floor - I've found that helps.

If you wait until the loaf is completely cold before slicing, that should help to stop any condensation on the slices from a still warm inside which will stick the slices together when freezing.

Ok I will try that today with the loaf I made yesterday.

It could be I tried to freeze it when it when still warm last time

Thanks!

I freeze my loaves whole, I take it that you use yours from the freezer a slice at a time?

Yes I need to use it a slice at a time

Dd is weaning and I want to make her salt free bread.

The loaf I made 2 days ago was a new recipe and didn't turn out so good, so i will make another one and see if I can freeze it once cold.
