I like a Deliciously Ella recipe. It's a warm winter salad and comprises of baked slices of aubergine, avocado chunks, wilted spinach , roasted tomatoes and a dressing of tahini, tamari and lemon juice. I have it with her quinoa tabbouleh and it's absolutely delicious

This is a side not a main, but whenever I make med veg from scratch then I feel like I've put lots of good stuff into my body, and it's very tasty.

ooh, I'm on an avocado streak at the moment. I'll probably overdose on them and never want to see another avocado ever again. That sounds great though Marni!

What do you include in your med veg Lettice? Courgette, peppers, onion, er...?

Hot and sour soup sounds perfect for what I'm craving. I don't suppose you have a good recipe sleepwhenidie ?

I bloody love a good rib eye, but I'm after something lighter at the moment.

I love a cauliflower and chickpea curry, with rice and dahl, very healthy, can be quite light if you don't have a mass of rice.

Loving hot wraps at the moment. Wholemeal wrap (taste the same, tell myself it's healthier) with some meat strips and onion fried in fahita spice mix, or you can do any flavours/spices really. Curry spices also work well. I use chicken, turkey, pork, beef, whatever I've got. Wrapped up with loads of home-made salsa of finely chopped tomato and avocado, lime juice, fresh coriander, small dollop of sour cream/natural yoghurt.

A nice salad is good too. I get DP to make them as he always goes to town and makes a beautiful arrangement on the plate. Plenty of variety makes it a decent meal. Last night I had cold chicken leftover from roast, with salad leaves bag stuff, plus red onion, cherry tomatoes, green and red peppers, spring onions, new potatoes, and DP also had beetroot with his. Was lovely and just what I needed after too much winter stodge.

Stir fry it has to be.
Ginger, garlic, chilli, soy sauce. Plenty of fresh veg (peppers, carrots, green beans, s snap peas, onions, spinach etc).
Ten or so mins to chop veg
Ten mins to cook in v hot wok. Finish with coriander.
Go easy on the noodles.
