Is there any point in this recipe instruction?

I'm making a beef bourgignon and the recipe tells me to fry the mushrooms before adding them to the bourgignon for 30 minutes. Sounds like unnecessary washing up to me, what do you think?

I find they always work better that way. Otherwise my dishes end up too watery.

I prefer fried mushrooms to boiled ones

Fry them, it's worth it. Or chuck them on a tray in the oven for half an hour or so if you're too lazy to stand over the pan like me Grin
