Best things to put on puff pastry

I haven't made one of those flat puff pastry tart things in ages and I've forgotten what's delicious.

What are your favourites? Savoury please. Extra points for vegetarian.

Plain old onion! or brie, tomato, walnuts and rocket (last two added after cooking) is good too.

Mix cream cheese with chopped spinach and splodge over part-baked pastry / cover with fried mushrooms / cover mushrooms with Camembert /bake - not if you're calorie counting though!

Or the same cream cheese base, topped with whatever you want - dd1 likes halved cherry tomatoes plus grated Parmesan, whilst dd2 likes pepperoni and mozzarella.

Base of pesto then mix of tomatoes and mozarella. (Non veggie points can also add salami). Finish with rocket once out of the oven.

I make a nice one with left over baked ham. Roll out the pastry or if you're like me, unroll it Grin cover base with a thin layer of caramelised onion relish, add thin slivers of the ham! slices of Brie or Camembert, lots of black pepper and bake delicious!
