Best things to put on puff pastry

I haven't made one of those flat puff pastry tart things in ages and I've forgotten what's delicious.

What are your favourites? Savoury please. Extra points for vegetarian.

Plain old onion! or brie, tomato, walnuts and rocket (last two added after cooking) is good too.

Mix cream cheese with chopped spinach and splodge over part-baked pastry / cover with fried mushrooms / cover mushrooms with Camembert /bake - not if you're calorie counting though!

Or the same cream cheese base, topped with whatever you want - dd1 likes halved cherry tomatoes plus grated Parmesan, whilst dd2 likes pepperoni and mozzarella.

Base of pesto then mix of tomatoes and mozarella. (Non veggie points can also add salami). Finish with rocket once out of the oven.

For a family, it's easy to do four different quarters, or two different halves, if everybody likes something slightly different!

I make a nice one with left over baked ham. Roll out the pastry or if you're like me, unroll it cover base with a thin layer of caramelised onion relish, add thin slivers of the ham! slices of Brie or Camembert, lots of black pepper and bake delicious!

Sour cream and then put a load of softened, slightly sweetened, red onions on top

Ricotta cheese with bacon, red onion and butternut squash.

Spread with crushed garlic and thyme mixed with a fresh goat cheese, topped with finely sliced tomato.

Oh I had somehow forgotten about puff pastry! I haven't made one in aaaaages. These all sound delish.

Sauteed crab and brie.

Spinach and feta. With raisins for them wot likes 'em.

Sauteed chanterelles.

Mascarpone mixed with grated parmesan, topped with courgette rounds tossed in olive oil and topped with a bit more parmesan.

Firm favourite in this house.

Frozen spinach (defrosted and wrung out), onion chutney, goat's cheese, sundried tomato and roasted peppers.

Caramelised onions, anchovies and olives: pissaladière.

Don't forget the olives.

For drinks. Just some chilli tomato pasta type sauce. Sacla do one. Then a cherry tom or blob of mozzarella

Crab and Brie? Ooh that's interesting. Can you still taste the crab?
