anyway I can prep this tonight?!

So tomorrow we are meant to be having some form of potato/leek/ham bake for dinner. Have done it a few times and it's a bit generally but normally I make it as we need it. Tomorrow we're all out and about a bit and ideally I'd like to be able to make it up tonight to be cooked as and when tomorrow. We also need to eat at different times.

Any ideas on how I could prep it all tonight so it's pretty much ready for tomorrow?! Ideally one of us will be eating at lunchtime and then some at tea time and finally a bit later on.

I've got some other general bits in if that helps. And I have a slow cooker. Usually use a cheese sauce to hold it together but happy to adapt.

No time to get anything else in really and money is tight atm so don't really want to if I'm honest. If I can't do it tonight I will find the time tomorrow it'll just be a bit tight.

I'd just make it all but not bake it. Cling film and leave in fridge overnight. It'll be fine.

Ah okay wasn't sure about the potatoes being chopped up and left?!

What I meant was just cook tonight, heat up again tomorrow.

If potatoes are peeled and chopped they either need to be in water, or in part of a dish (e.g. Covered by a sauce) otherwise they go grey.
I peel potatoes the night before if I have a busy day coming up.
