What on earth am i gona do with my pumpkin? Help Please

Bought a pumpkin for halloween. What with all the 'goings-on' in my household i didnt even get the chance to carve it.
Now i have £3 worth of orange pumkin on my sideboard, that i dont have a clue about.
Any Ideas MNers?

cut it into wedges.

brush w/olive oil and seasonings.

roast in over at 180 till soft.

scoop it out.

fry up an onion and some bacon.

add in the pumpkin flesh, a cup of white rice and two cups of veggie broth.

cover and simmer till rice is cooked.

you can season the pumpkin w/curry spices as well, though. and then do the same recipe but omit the bacon and go for lentils instead.

it's VERY versatile!

I roasted my scoops with some garlic and red onins until soft

then put in with some red lentils, carrots chilli flakes, cumin seeds and a touch of garam masala
and simmered for a couple of hours

put through a blender
then sive

and you have a nice spicy soup

I've just made soup with contents of pumpkin and made the lantern so quickly i just scooped it out and put into fridge with seeds. so i filtered all the seeds out and dry roasted. After listening to chris evans show meant to be good for you but i left them in too long not 20 mins just 10 i would reckon for again.

roasted one sounds lovely i used carol vorderman with sweet potato one good luck.

thank you for your ideas, any more are welcome as DP protested on the cancellation of curry night, and didnt want pumpkin in it... (dont mess with perfection- his words were, bless him) cant stand to see wasted food, so cant cut my losses im afraid
tis better to try and fail than to not try at all

I steamed mine up and pureed it. Mixed it with honey and/or condensed milk and topped it with chopped almonds. Made 3 servings of pudding from that. My DD loved it.

Donate to your local farm. The cows and chickens love it . To be honest over here (US) we have pie pumpkins and carving pumpkins. The pie ones are the ones used for cooking as they have much more flavour, like butternut squash. You'd be better off with squash. I love cooking with pumpkin but some of them can be completely tasteless.

I made some yummy pumpkin and raisin bread, can send recipe to anyone who is interested, although to be honest the pumpkin content is pretty low. Making pumpkin cake tonight (a fruit cake with caramelised dried fruit mixture and mashed pumpkin mixed in) and planning pumpkin soup for tomorrow, probably a spicy one a bit like doormat's.

I also have a recipe for yummy pumpkin gnocchi but they are very labour intensive.

roast wih oil, seasoning, chilli and maple syrup. make salad with rocket, shaved parmesan, roasted,er, pumpkin seeds and caramelised red onions. seriously good.
