Forgive time difference (8 hours behind)....home from hols knackered, empty fridge, inspiration lacking, friend coming to stay.

Easy, quick, cheap and vegan! 3 adults, 2 kids

Um... I had vegetable soup with all the random bits in the fridge. Except mine had lamb stock and cream in it.

I realise this isn't helpful for you now but I like answering vegan threads and it was really yummy (if a little garlicky)

What have you got?
Fry cloves of garlic in a decent amount of oil, add tinned tomatoes and whatever herbs and stir through spaghetti.

Sorted - doing avocado/basil sauce with spaghetti and courgette noodles

But need more inspiration for the rest of the week as just cba at the moment!!

Perhaps if you said what you actually did have in you might have got a more appropriate response. I was assuming that you had an empty fridge, and just store cupboard ingredients.

Jacket potatoes! Easily customisable if you're not all vegan.

Veggie chilli - beans, tinned tomatoes, onion, peppers, maybe lentils too.

Tortillas - again, vegans can leave out sour cream and cheese. Leftover veg chilli can be used up this way.

I love spaghetti with soya beans and sweetcorn myself - drain, drizzle with virgin olive oil, salt and pepper, then serve immediately. Delish.

Easy option - vegan veggie fingers (Tesco does them), oven chips and peas. Provide white bread and sunflower spread for chip butties Grin

Roasted veg mixed in with rice or couscous, plus soy beans for protein. Easy and yum.

Also, a trip to Wagamamas may be in order!

Touchy touchy! No I didn't have it in, had nothing in as I said, I had to go to the shops hence needing inspiration. We had spaghetti and we grow basil, I love somewhere warm and avocados are cheap as chips at the moment, as are courgettes. Not sure what your point is?

Full of cold and cba thinking up dinners but we're also a bit skint til next week. So I also got some chickpeas (I do thankfully have red lentils and rice in as staple store cupboard) so it'll be Dahl tonight

Actually plumpingup it's been a while since I did something as quick and easy and delicious as roast veg with couscous....think I have some couscous in so that will do for tomorrow, thanks!

I'm having chickpea curry tonight. 2 cans chickpeas, can of coconut milk, tumeric & curry powder with rice. I'll chuck sweet potato and squash into the leftovers tomorrow for my dinner tomorrow night because I cba to do it tonight.

Curry is the holy grail of veg*n food!
