Roast lamb - rack?

Does it go on a rack or straight in the roasting dish??

The cooking instructions were really vague.

It didn't say to cover in tin foil but I have done, loosely. I was planning on taking it off half way through. Does that sound OK?

Have sent DH to the Spar for mint sauce as I found some in the cupboard but it had been opened and had a use by date of 2009.

I think I need Wine now.

I would leave the foil on until the last 30 minutes, then whack the oven up to 200 so it goes crispy and even more yum.

Grin at your mint sauce!

Wine is compulsory when cooking a roast.

Excellent choice! Yes, that's when I shove the roasties in too, then they get an extra 10-15 mins after while the lamb rests. Enjoy your lamb (and cava!).

I'm terrified now, the lamb looked really anaemic when I took the foil off!

I've turned it up and poured the Cava, for my nerves. Wink

Yes it does look rather pale, but the blast at the end does the trick. So glad it turned out perfectly! Happy Easter.
