left over roast beef

Roasted a joint. Had a roast, then beef baguettes and chips. Now run out of ideas on what else to do with it. Could put it in freezer but then I'd have to cook something else. Anything fun?

Slice potatoes and onions, mix. Put about half an inch of water in a pan, layer in potatoes/onion mix, then a layer of beef chopped to bite size, then a layer of potatoes/onions. Put a lid on, heat slowly, leave to simmer until the potatoes are cooked, add water if its drying out lift the lid if its too wet.

Any leftover veg can be added to the mix

Slice it into strips and do a stir fry. Or fajitas

Thin slices frozen in gravy for when you fancy a roast but don't want to cook a whole joint. It's so delicious and tender when you heat it up again. Yummy.
