So I have some beef and a slow cooker.....now what??

Wanting to make a beef casserole for tonight but totally forgotten how to do it!! (Baby brain!)

I have 2 packs of beef cubes and will get some carrots, swede, onion, parsnips and cut into chunks.

What else do I put in there? For how long?

I was also going to get some aunt Bessie's frozen dumplings, can I add them too? If so when?

I make some stock from a beef stock cube, chuck everything in at some point in the morning and whack it on medium for the rest of the day! No idea about the dumplings though...

Bottle of ale (something like Old Empire, not strong like Bishops Finger). Brown beef and onions and add a tbsp flour. Bung all in slow cooker for about 4 hours. With about 1.5 hours to go bung in mushrooms and the dumplings (guessing with the dumplings, I do them in the oven to go crispy then bung in about 20 mins from end). Yum. Had this on Monday.

Stupid question but does the alcohol burn off? Was hoping to feed to my toddler too

Reduce the beer in a pot before you add it to boil off the alcohol

Yep, just bung it all in. Don't forget the cornflour to thicken if it's too watery at the end.
