Really light bread butter pud recipe?

Am planning a brioche bread and butter pudding for Sunday and I can almost taste a pud I made many years ago that turned out so light and fluffy it was almost unrecognisable as a B&B pudding. Of course I can't find the recipe now - does anyone know what the secret is to making it light? Thanks

Just using brioche instead of bread will make it light.

I use the recipe of Anton Mossiman - no dried fruit, cut off any crusts ( though does brioche have crusts? ) cover the top with foil and cook in a bain marie -well a roasting tin with boiling water! and just take foil off near the end to brown it .

Mmmmm - may have to make one now.....:)
