I have a ginormous jar of rhubarb compote and I don't know whatto do with it!

Any ideas? It's huge, and no one is eating it because they're not big rhubarb fans.

What can I do with it that uses it all up?

Make it into rhubarb fool.
Add beetroot juice and tell them its something else.
Spice it up and serve with curry instead of chutney
Serve it with venison

Swirl it through ice cream? Use as a base for jam?

It makes a lovely chutney.

Also rhubarb and ginger jam is nice. Let me know if you want the recipe.

You could freeze it too.

Chutney sounds promising.

I'd love to turn it into jam, but I fear that we'd end up with uneaten jars of rhubarb jam instead of compote IYSWIM?

Can I just mke custard And swirl it through that?

Mix it with some chopped up stem ginger and stir into rice pudding.

Or just swirl it into natural yoghurt and then dip nice biscuits into it.

My friend made a rhubarb and ginger pavlova for our lunch yesterday - meringue with a layer of stem ginger and then cream and then rhubarb compote. Absolutely amazing.
