Carrot Cake Pancakes - help please

I found a recipe for carrot cake inspired pancakes.

Recipe is:

100g porridge oats
3 eggs
1 medium carrot, grated
3 tsp cinnamon
1 tsp ground ginger
4 tbs Greek yoghurt (although I used fat free vanilla as I had no Greek in the fridge)

Blitz it all together in a blender and until you get the consistency of batter then cook like you would a pancake.

My problem is - how do you cook a pancake? I have tried so many times and I either end up with some kind of super think omelletey / scrambled egg mess or a burnt pile of slop that I have to scrap and flop over than flip like it should.

I have tried using vegetable oil, olive oil, fry light - makes no difference. I have tried having my pan on high heat and a medium heat. I have tried different frying pans.

Should I resign myself to the fact that I will never be able to make a pancake or is it maybe something to do with the recipe?

The little bits of unburnt stuff taste delicious and really carrot cakey so I want to persevere.

I am on Slimming World and am trying to find some more exciting breakfast options rather than my usual poached egg and mushroom on toast.

Apologies if I'm reading this wrong, but you are trying to make an American style (small, thick) pancake and not an English/French crepe style (big, thin) pancake, aren't you?

Would make a lot of difference!! :)

Hi huevos - yes these are American style. Small but thick. I think that's why what I end up with resembles little omelettes!! Grin
