ideas for left over pulled pork

Every time we do pulled pork we make the joint last 3 meals, but 3 meals the same in a row is boring. I want to do pulled pork again at the weekend, and I have googled other things to do with it, but have not been inspired at all.

A popular idea is quesadillas, but I have never made them before and I am not sure my family would even eat them.

So what do you do?

Burritos with rice, kidney beans and pulled pork.
The obvious suggestion in a bun.
On top of nachos
On top of a pizza
In amongst a cheesy pasta

We had it last week love how a £3.50 joint does three big meals

What joint are you buying for £3.50 and where do you get it?

I usually buy a 1.2kg joint for around £6, last time it was pork leg as they had no shoulder. Maybe the butcher would be cheaper for shoulder.

Burritos is a good idea, we usually have it in soft rolls or baguettes the first night. All your ideas are great actually. Thanks.

Chuck it in a stir fry. Serve with soft noodle, rice, spring rolls etc.

I cook the joint plain in the SC and then divide it up. Then just add BBQ to the portion for that meal and heat through.

That soup sounds good. I have never actually made soup in the SC. I worry about getting the liquid right.

It's lovely in a baguette sandwich with cucumber, poss spring onion, and hoisin sauce. Bit like crispy duck, but pork.

We've got a big pork shoulder in as they were half price in tesco. I'm going to do a roast dinner then turn the remainder into pulled pork. We're going to have some as burritos then freeze the rest to have in tacos next week

For pulled pork we get the boneless joint from asda that's about £2.something/kg and cut it into portions to freeze. That way we get 2-4 meals but cook them separately so we can have them whenever.

We do this a lot.

In brioche buns with onion, tomato, lettuce and sauce of choice
In jacket potatoes with BBQ sauce and slow cooked onions
In crispy tacos with guacamole, sour cream salsa tomatoes and lettuce
In soft tortillas, as above
In a stir fry with veg and hoisin - with rice, noodles
Fried with plum sauce and served in pancake with shredded cucumber and spring onion like crispy duck

I got a 3kg shoulder from the butchers today. It was a bit pricey I think, but I am slow cooking it now, and then will portion it out and freeze what we aren't eating in the next few days, should do us 6 meals in total.
