Best biscuit for cutting shapes

I want to make some Easter biscuits, and I have cutters in the shape of a rabbit, duck, etc.
What is the best type of biscuit to make to keep the shape of the animal?
Gingerbread? Shortbread? Something else?
Any ideas?

I've used this recipe before. It works well. The biscuits stay in shape & don't spread when they cook.

Yes, that Nigella recipe is a good one. It helps to keep the dough fairly cold when you cut them out to keep the shape sharp. If it warms up again, it might also help to chill them again on the baking sheets before you bake them.

Not these particular ones, although I have the book with that Nigella recipe in, but in general I make biscuit dough in my magimix food processor. I don't think you need to bother about getting air into the mixture like you do for cakes, so a food processor has always worked fine for me.

Another vote for that Nigella recipe. It makes a lot of dough and I've successfully freezed half the batch for later use.

I made the nigella one, they held their shape lovely!
They were decorated by toddlers!
