And now have two large bags of carrots and two bags of rooster potatoes! Any scrummy ideas before they go off? Anything I can freeze too? (Just a caveat I am 30 weeks pregnant, and still pretty sick, so nothing too strenuous!) Wink

Chop the carrots and freeze them as is.
Bake some of the potatoes, and freeze once cool, to reheat just shove in microwave for 6-7 minutes.
The potatoes will keep as long as they're kept cold and dark though, we buy them in 25 kg sacks and get weeks out of them.

Just make masses of soup - you'll be glad of a freezer full of soup when you have a new baby. Top tip- place a freezer bag in a mug then fill up with soup and you have perfect portion for one-handed soup consumption.

Roast the veg with oil to get more flavour and then freeze / purée then freeze. Soup is a good one or you can use the potato to thicken other dishes e.g. stews if the gravy isn't thick enough.

Make 1)cheesy mash and freeze, 2)par boil potatoes, rough them up, drizzle with oil and freeze, then roast them from frozen, 3)bake potatoes then split them, remove the cooked potato and mix with butter/cheese/chives/ham or cooked bacon/onions and fill the skins and freeze as individual halves, 4)leek and potato soup?

Oh yes, the potatoes in their jackets sound yummy, specially the stuffed ones, I have some bacon languishing in the fridge too! Genius idea. I could then defrost, and serve with a tin of the old trusty baked beans, and get presto, supper!! Yum!! Thanks!!

Make lots of soup using the carrots and the potatoes and add soup mix which contains dried Pearl Barley, Yellow Split Peas, Green Split Peas, Marrowfat Peas, Red Split Lentils. You can buy it in any supermarket for about £1.20. Then freeze in portions. You could add ham or bacon too.

Roasted carrots are delicious with lime and yoghurt.

Carrot and coriander soup freezes well recipe here and it's more delicate but go easy on the spices if you intend to BF.

That'll help keep your strength up once baby arrives. Hope you feel better soon.
