Meals for one ideas?

My husband is in the Air Force and deploying soon for 6 months so for some of that it will just be myself to cook for and for the other part I'll have a friend coming to stay. I don't mind eating samey food or eating the same thing a couple days in a row. I'm gluten free but do eat gf pasta, bread etc a couple times a week and dont eat fish. Any meal ideas?

Have you got a freezer? How about getting some cartons with lids, like they have at the takeaway and doing a bit of batch cooking? If you did say a lasagne and a casserole, you could pop a portion straight from the freezer into the oven whilst you have wine and a bath tidy up Smile

You could start with a piece of gammon, roast it for Sunday with the usual, use the pan juices with some of the meat, lentils or peas and veg to make soup - that's a few lunches sorted, cold gammon & chips the next night and add a cooked chicken breast to the remaining gammon with a sauce and pastry for chicken and ham pie.

I'm gluten free too, so a lot of my meals use rice. Chicken fried rice is very easy to whip up and is fun, fillign and nutritious is you add some nice chillis, alfalfa or bean sprouts, little bit of pineapple etc.
