Want inspiration, I have the following:

Chicken
Smoked salmon
Feta / cheddar / smoked cheese
Eggs
Sweet potatoes
Spinach
Spring onions
Peppers
Stir fry veggies
Avocado
Pak choy

All the normal store cupboard stuff - rice, pasta, tinned toms, chick peas, lentils, kidney beans etc etc

Help please!

Chicken lasagne always goes down well here. Chicken, onions, peppers, courgette, tinned tomatos, basil, oregano and tom purée. Then the usual lasagne sheet, white/cheese sauce layers.

Chicken fajitas with salsa and guacamole?

If you have bagels you can do a great lunch

toast half a bagel each, spread with horseradish/mild mustard mixed with mayo.

dry fry one slice of smoked salmon each until just opaqua
fry/poach one egg each

stack salmon on bagel, top with egg.

Chicken and feta salad with roasted sweet potatoes ( roast with chilli flakes, sea salt and Rosemary)

Make a nice tomatoey sauce in a shallow pan, with tinned toms, peppers and whatever else you find.

Cut feta into small chunks. If you have chicken breasts, slit them with a knife and stuff with the feta. If you have thigh fillets, just wrap them round the feta.

Pop the stuffed chicken into the sauce, put a lid on, and cook for 20-30 minutes until the chicken is cooked through.

Fritatta type thing with sweet pots, spinach, pepper and feta

I'd probably do a chicken pad thai (using the chicken, peppers, spring onion, eggs) but you need some pad thai sauce. Or you could do a delicious egg fried rice with pretty much the same ingredients.

Alternatively, you could roast up the sweet pots and red pepper, and make a nice warm salad adding some salad leaves (if you have them?), balsamic vinegar and crumble in lots of feta cheese.

Or a smoked salmon, spinach and cheese pasta...

Thank you all, I did indeed go for chicken pad thai, have all the fish sauce etc etc

Then had a bloody delicious smoked salmon, scrambled eggs (with spinach, chilli, basil and feta) and avocado for breakfast

Yummy
