Hugh Fernley Whittingsals vegetables book is really good. It's not a vegetarian cookbook but it is all about the veg. I love it.

Simon Hopkinson's "the vegetarian option" is also great.

The Asian vegan cookbook, by Hema Parekh. Amazing tofu recipes.

Also love Plenty and Delias vegetarian book (which might be out of print)

Madhur J's World Vegetarian.

The World Food Cafe books are gorgeous to read, but I haven't yet cooked an awful lot from them.

Hugh FW's doesn't do much for me. I've been veggie for nearly thirty years - I don't need a recipe for cheese on toast!

Isa Does It, by Isa Chandra Moskowitz. It's a totally vegan cookbook, but don't let that put you off! We went to visit some vegan friends who cooked a few things from this and I'd ordered us a copy before we even went home. Best loved cookbook in our house, by a long way.

The Cranks ones are good and so is Rose Elliott. I have a lovely recipe from a Sarah Brown book too.
