DS and I made this last week. It's delicious

Only thimodification I made was to do it in a square tin instead of a loaf tin.

Gingerbread

225g SR flour
2tsp ground ginger
2tsp mixed spice
115g dark muscovado sugar
115g black treacle
115g golden syrup
115g butter
2 eggs
150ml milk

Preheat oven to 160C/325F/gas 3. Grease and line loaf tin (I used square tin, about 20cm square).

Sift flour, ginger and mixed spice into a bowl. Melt the sugar, treacle, syrup and butter together for about 5 mins. Do not allow to boil. Cool slightly.

Beat the eggs into the milk and add to the dry ingredients together with the melted mixture to make a soft batter.

Pour into the prepared tin and bake for 35 mins until springy to touch. Cool in the tin.

I think it tasted better the second day

BTW i do love a recipe with weights for treacle

looks good - took a bit more than 35 mins... closer to 45. Just waiting for it to cool for the taste test
