i appear to have prepared roast veg for a rugby team - can i make soup w leftovers?

(given that there'll only be me, dh and ds (17mo) eating it?

and, if so, do i just whizz it all up and add stock?

Yes you can make soup. I would make some stock add the veg to warm through and for the flavours to mingle a bit then whizz. You could add some chickpeas or beans or something too.

a confession: i've never made my own stock. given that we're also having roast chicken i suppose i could mke it with the carcass? [dubious, scared emoticon]. or can i just cheat with a veg stock cube?

i have a couple of tins of canelinni (sp.?) beans - good idea

add some chopped tomatos and make a ratatouille type dish and make some cous cous to go with it,...

Well I make my own stock sometimes - but never use it and end up junking it! A stock cube is fine!

Did the same the other week, one day added some canned tomatoes and stir fried chicken fillets - had with jacket potatoes. Used the rest of veg what was left after that on a pizza base with fresh basil and mozzarella my dd(18mths) loved that.

Yes roasted veg make luuuuverly soup. That is how I make my pumpkin soup - roasting it first.

chicken stock dead easy

cover the carcas with water in a big pan

add onion (peeled) carrot , celery , seasoning

bring slowly to the boil, skimming the fat off the top as you go

reduce down until required strength

add any shreds of chicken from the carcass too

leave to cool and remove the rest of the fat from the surface

can always freeze it and save for another soup as veg stock be fine for roasted veg soup...

Or, roast some tomatoes (or add a tin of chopped tomatoes), blend it all up and make a vegetable sauce. It freezes brilliantly in small portions and can be used on its own with pasta, or added to mince to make a bolognaise sauce.
