honeycomb very sticky

So made honeycomb randomly earlier. It's set but still very sticky is there anything I can do to rescue it because it's not 'smashable' right now

What recipe did you use?
Iirc adding butter makes it chewier?

No butter in it just sugar, golden syrup and then bicarb.

Would a bit of cornflour on top make it a bit less sticky?

If it's just the top that's sticky, maybe put some melted chocolate on top a la Crunchie?

Shamelessly place marking as I have never managed to make this without it going sticky. I followed the nigella lawson recipe by streaming the video and cooked at the same time as her. Still turned our sticky.

I've only ever made it once, so hardly an expert, but it came out fine.
I read this article and used the recipe at the end. She does test Nigella's in there.

Did you use a sugar thermometer? I haven't reread the article above but
I do seem to recall that if it doesn't get hot enough it won't set?

Umm did you use that new fangled pourable syrup in a bottle rather than the tin , I made it twice with this recently and it went sticky went back to tin and it was fine. Just a thought x

I've made this a lot, using assorted recipes and have found it's very hit and miss. Tbh, I eat it anyway! But there seems to be no reason why it sometimes works and sometimes doesn't. There probably is one and I'm missing it though :)

New fangled syrup! Maybe that's the problem.

Ah well I'm going to melt some chocolate on top and hope that fixes it!

it might just be the weather....ime when it's grey and damp sugar stuff can be very difficult. Meringues and Honeycomb both

Other than that I might say not quite a high enough temperature, or maybe too much stirring

I must make some again, dh loves it and it's so quick.

Yes, I've had good results with new fangled syrup too. I think Catsmamma has it tbh.
