Could someone point me to a recipe for cake in which I can use up a huge tub of plain yoghurt that's about to go out of date?

Thank you!

Roger Pizey's Turkish Yogurt cake is pretty good and not faffy to make:

You'll need:
4 large eggs, separated
100g caster sugar
3 tbsp plain flour (pref sifted)
400g plain yogurt
finely grated zest and juice of one lemon (I've also used lime, or a small orange)
icing sugar to dust

Grease a 23cm cake tin.
Beat together the egg yolks and sugar
Add in the flour, yogurt, zest and lemon juice. Mix thoroughly
Whisk the egg whites until stiff and fold in.
Pour into the tin and bake in a 190C oven until the top is brown (anything between 40 - 60 mins depending on oven type). It will puff up and then subside when cooking.
Dust with icing sugar once cool.
Try not to eat in one sitting! Grin

Thank you, Moonlight. Will make it later today. Does it keep? Because I usually feed my baking experiments to the other adults at a Friday toddler group I attend...

Mind you, when no one responded for a while yesterday, I made Claudis Roden's Sephardic orange cake, which is delicious...

Nigella has a vanilla cake in her Christmas book which has yoghurt in - it is yummy.
